Whether you’re vegan for life or vegan for a day, this Vegan Mango-Coconut Green Smoothie is sure to delight. What’s better than mango, coconut, and spinach whipped up to creamy smooth perfection? Maybe…nothing!
INGREDIENTS (serves 2)
- 1/2 cup orange juice
- 1/2 cup ice cubes
- 1/2 medium banana
- 3/4 cup coconut milk*
- 1 cup fresh or frozen mango cubes
- 1 cup organic, freshly washed spinach leaves, packed
- Place all ingredients in a blender and puree until smooth. Pour into glasses, add toppings if desired, and serve with a straw.
* Can substitute almond milk, but the end result might not be as creamy and won’t taste coconutty.
